On the subject of plyos, I would have thought that the goal is to minimise ground contact time and it is best to utilise as much elasticity in your achilles tendon. To me that means keeping the heel off the ground but not at the expense of stability; you really need sufficient calf and foot strength for this to work. Then again I'm no expert here. Would be interested in hearing the reasons behind his views. Out of interest, what exercises were you doing?
